“You think you got problems?” My mom said to me. I don’t think I’d been complaining about a problem, just so you know, but anyway, “You think you got problems?” she said, “I’ve got a vegan coming to Thanksgiving dinner.”
None of the food at our family’s traditional Thanksgiving dinner is even accidentally vegan and unlike routine family dinners where adjustments can be made, none of the foods on that menu are permitted to be altered. There are things people expect and without these things? Anarchy.
“Not to worry,” I told my mom. I would be bringing my own food for Thanksgiving.
This left me with a decision. On the one hand, I could come up with a simple plate of food for myself. On the other hand, I could prepare an entire vegan Thanksgiving dinner, knowing that I would be the only one eating it, and I would have lots and lots of leftovers.
I opted for the other hand. I was pretty excited about pulling together a vegan Thanksgiving and who doesn’t want lots and lots of leftovers?
